Wine has always been the hero in our Restaurant.

The 7-course Discovery Menu is our signature experience; each course is inspired by one of our wines. Head chef, Santiago (Santi) Fernandez and his team also take inspiration from the vineyards and winemaking process in creating dishes that bring a small part of our Estate to the table.

Our 4-course Discovery Menu is a taster of the 7-course, allowing those with limited time to choose some of their courses, either matched to our recommendations or selected from our extensive wine list.

As this is a journey of discovery, we recommend you don’t view the menu in advance but if you can’t wait, take a sneak peek at the latest seasonal 7-course and 4-course menus. Please note, our menus change every two months so this one may not be the menu presented on the day of your visit.

Meet our head chef, santiago fernandez

Head Chef Santi has continued our long term philosophy of showcasing the best of Margaret River produce, either sourced from our kitchen garden or local suppliers.

“I would like to create food based in the region – with wine, we talk of terroir, or the place it comes from. I want to create food du terroir. Using produce that is seasonal, ethically sourced, such as sustainable seafood, and organic when possible. Margaret River’s fine wines are renowned across the world and the region also offers plenty of quality produce, which is always a great source of inspiration for chefs and cooks.”

“I want to work with the winemakers and Claire (our Sommelier) to match our wines in the best way possible with contemporary cooking style and techniques.”

High tea

We have put our own twist on a traditional favourite, with High Tea offered on Saturday and Sunday at 10.30am.

High Tea: $49
Sparkling High Tea: $60 includes a glass of our Project Blanc de Blancs or Project Sparkling Chenin Blanc.
