Aravina Estate cabernet merlot 2012

INTRO

Classic Margaret River black fruit dominated by cassis and spicy French oak on the nose. Dry, with well integrated fruit and tannins and a lovely ripe blackcurrant flavour that lingers on the palate. The Merlot component of 47% smooths out the edges of the Cabernet Sauvignon. Drink now or will age for five to eight years.

WINEMAKING NOTES
The Cabernet Sauvignon was picked on 19 March 2012 at a low rate of 4.4 T/Ha. The Merlot was picked on 29 March 2015 at 6.3 T/Ha. The individual batches of Cabernet Sauvignon and Merlot were crushed and subsequently fermented in a combination of upright static fermenters and open fermenters. Following malolactic fermentation, the wines were allowed to mature for 18 to 20 months in new and seasoned French oak barriques. Individual batches were assessed and blended before the wine was lightly fined, filtered and bottled.

COLOUR
Deep ruby red
AROMA
The wine exhibits ripe cassis and dark chocolate aromas. High notes of cedary oak and bay leaf add further complexity.

PALATE
The palate unfolds in a myriad of layers of ripe blackcurrant and red fruit interwoven with savoury oak. The long and flavoursome finish is
well supported by dry and fine grained tannins.

Smooth, so smooth. Perfectly weighted and integrated cabernet merlot exhibiting the best qualities of these two wonderful Margaret River bedfellows. Leafy black olive and understated blackcurrant with some nice savoury oak touches. The palate is so beautiful woven together providing a lush launching pad to a long, pleasing finish.
