Houghton Margaret River Cabernet Sauvignon 2013


Soft, generous and thoroughly delicious cabernet from Margaret River. Built on a deeply concentrated mass of blackcurrant fruit flavours. The tannins structure is excellent and sits comfortably within the wine supported by some high-quality, well-managed oak. Damn good wine for less than $20.

The Cabernet Sauvignon fruit was harvested in mid-April, with baumé measures of 13 -13. 5 with ripe fruit flavours and tannins. The fruit was de-stemmed to stainless steel fermenters where it was inoculated for fermentation. The ferment was restricted to a maximum of 28˚C to aid in the retention of the fresh and vibrant varietal characters. Fermenters were pressed out at ~ 1. Be and allowed to ferment to dryness before racking to oak for malolactic fermentation. The wine was blended and lightly fined before bottling.

Houghton Winemaker’s Notes

A brilliant deep dark red in colour, with a vibrant crimson hue. The bouquet displays primary fruit aromas of plum, blueberry and black cherry. These combine with bay leaf, thyme and a subtle herbaceous note very characteristic of Margaret River Cabernet Sauvignon. French oak maturation contributes flavours of vanillin, coffee bean and cigar box.
The medium-bodied palate displays bright fruit, with plum, raspberry, strawberry, chocolate and cinnamon spice. The suppleness of the fruit is balanced by a fine tannin structure, ensuring a long dry finish.
