The fruit was hand-picked to maximise quality and to allow sorting of the fruit to ensure only the highest quality grapes were included. Fermented in open top fermenters with indigenous and cultured yeast for ten days, the wine was gently
pressed off skins in a basket press, to complete alcoholic fermentation in seasoned French oak. The wine was then racked and inoculated for malolactic fermentation. Following malolactic fermentation, the wine spent 15 months maturation in new, 1 year old and 2 year old French oak.

Houghton Winemaker’s Notes

Clear and deep crimson in appearance with a ruby hue, the wine displays clean and pronounced fragrance of cassis and blackberry, with flickers of bay leaf and cedar oak. The palate delivers expressive fruit characters of cassis, plum and tobacco with hints of mint. The fine tannin structure provides texture and is balanced by the ample depth of fruit. Elegant use of creamy French oak provides complexity and length to the palate. The 2011 Wisdom Cabernet Sauvignon is a sleek example of Margaret River Cabernet Sauvignon, with a cellaring potential of up to 10 years.
