An intense batch from our 15 year old Estate vines in the Wallcliffe Sub-Region, crafted by wine makers Clive Otto and Kate Morgan.
2012 Vintage will be remembered as almost perfect for the growing and production of premium Cabernet Sauvignon. The summer was long and warm and almost devoid of any rain events throughout the growing period. These conditions along with the demise of the local silver eyed bird (bush fires got them!) resulted in great yields of perfectly ripened Cabernet. Hand picked in early April, the fruit was de-stemmed and separated into open and static fermenters. The open ferment had an eight day period on skins whilst the static ferment was on skins for a total of 35 days. The fruit was pressed off and spent 18 months in a combination of new and used French oak, approximately 30% new.

The fruit for this very dry cabernet comes from mature vines in the Wallcliffe subregion. Lifted leafy cabernet on the nose with traces of tobacco leaf and cedar overlaying the red currant fruit aromas. The palate has a tight linear feel with grainy tannins and dusty oak. CELLAR 5 years
