This is a bubbly, like 2009, that even the French would be proud of! Made using the “Methode Traditionelle” technique, this wine has spent 48 months aging on lees. This style of wine is clean and refreshing with a delicate nose.
It has subtle green apple fruit characteristics delicately interwoven with very fine mousse and a creamy complex yeast. With vanilla on the finish, meringue, creme brule and brioche come to mind while enjoying this wine.
This vintage wine has plenty of potential to age nicely. A perfect match with fresh oysters.

Immediately strikes on the nose with that deep toasty autolysis character. This is a sparkling wine that is drinking at its peak and showing some most impressive classic sparkling characters. Deep and penetrating palate with a complex buttery yeasty middle finished with a dry mix of savouriness and lifted citrus. CELLAR 4 years
