Vinification

Fruit was lightly whole bunched pressed on the 5th of February 2015. Juice was fermented in French oak barriques 30% new and the remainder 2 & 3 year old oak with 100% wild yeast and fermented cool for the next 20 days. The wine remained in oak for 15 months.
Colour

Light straw.
Nose

Peach and Honeysuckle.
Palate

Rich, creamy taste hints of Peach, Apricot full fruit flavour with spicy cinnamon and notes of new oak in the background. This is a thinking person’s wine, stop and let the wine open up as you drink, the surprise is well worth it.
