About Flying Fish Cove

Flying Fish Cove is a producer of premium quality, great value, passionately Margaret River wines. Located 25km north of Margaret River township, along the renowned Caves road in the Wilyabrup sub-regional area.

With two strings to its bow, Flying Fish Cove is both a specialist contract winemaking business and a producer of fine wines with its own brand.
In 2000, a group of 20 grape growers invested in the construction of the Flying Fish Cove winery, which carried out its first vintage in 2001.
The experienced winemaking staff produces wines for over 20 customers as well as the renowned Flying Fish Cove label.

We are passionately Margaret River

Margaret River is known to the locals as “The Cape Region”, with Cape Naturaliste in the north and Cape Leeuwin on the south. Our beautiful region is surrounded by oceans, the Indian and the Great Southern Ocean. The rugged coastline blends one of Australia’s finest viticultural regions, with some of the most powerful surf breaks in the world.
You will always find that people from our beautiful region are extremely proud of their land and its wineries.

The region is blessed with a climate favourable for growing premium wine grape.

Like Bordeaux, Margaret River has generous winter rains and gravely soils with the benefits of cool ocean breeze guarded by tall karri, jarrah and peppermint forests. Hail, frost and tropical storms are rare.

Flying Fish Cove

Flying Fish Cove began as a sort of ‘co-op’ between local farmers in the region building a state-of-the-art winery to produce its wine. Soon after, they again pooled their resources, taking the finest fruit to produce regional wine at its very best – and so Flying Fish Cove was born.

Flying Fish sauvignon blanc semillon 2016 ($22)

Settled down after an extra year in bottle and is showing really attractive characters. Crunchy and loaded with a bowl full of tropical fruits. A splash of passionfruit pulp and plenty of lemon zest and there you have it – great current drinking for a classic blend.

Flying Fish chardonnay 2016 ($22)

A lighter style of chardonnay displaying lovely primary chardie fruits with a citrus tang balancing the fleshy peach pulp. A little nuttiness adds to the complexity. Best in the short term.

Flying Fish The Wildberry Reserve chardonnay 2015 ($45)

This comes from a very good vineyard that’s been producing outstanding fruit and wines for some years. This one gets a lot right and is one of the best-ever releases from Flying Fish. Aromas of brioche and nougat with a vanilla bean character and traces of struck match lees. The palate is intense and minerally with a neat mix of citrus and vanilla bean. Really impressive wine.

Flying Fish cabernet merlot 2014 ($22)

Well-crafted cab merlot offering quality drinking at a good price. Plummy dark chocolate and blackcurrant stake their claims on a lush fruity palate. Ripe firmish tannins and a dollop of oak provides some necessary structure and control. Works for me in the short term

Flying Fish The Wildberry Reserve cabernet sauvignon 2014 ($45)

Expertly crafted cabernet, here. Leafy tobacco characters with an edge of black olive on the nose. The flavours of blackcurrant and dark chocolate build through the palate with a firm tannin and oak core driving through to a finish that punches long. The extra year in bottle has brought all the components perfectly into balance and focus. Excellent wine. A few years will see it start to really hit its straps.

Wine Making Process

 

Flying Fish Cove is a modern, well-equiped winery capable of processing up to 2,000 tonnes of grapes per year

The winery is designed for small to medium batch processing. Our winemaking process is a blend of old world techniques as well as innovative ones.
Our final desire is always to enhance the best of Margaret River terroir producing a premium wine showing clean fruits flavours, intensity and elegance.

Flying Fish Cove built a strong reputation with its contracting business.

Many famous wineries of the region trust us to produce their wines. Our contract customers include Swings and Roundabouts, Knotting Hill, Snake and Herring and Windance wines . Several of these customers have received awards, trophies and accolades around the country.
